Healthy Slow Cooker Southwest Turkey Chili

This slow cooker southwest turkey chili recipe is made with healthy and lean ingredients that pack a punch when it comes to flavor. Ingredients
  

  • 1 lb Ground Turkey
  • 2 cups Chicken Broth
  • 14.5 oz Can of Diced Tomatoes
  • 15.25 oz Can of Corn
  • 1/2 Yellow Onion
  • 1 Red Bell Pepper
  • 2 tbsp Minced Garlic
  • 1 tbsp Olive Oil
  • 1 packet Taco Seasoning
  • 2 tbsp Chili Powder
  • 2 tsp Cumin
  • 1 tsp Oregano
  • 1/2 tsp Salt
  • 1/4 tsp Cayenne Pepper

Instructions
 

  • Spray the slow cooker with non-stick cooking spray or line with a slow cooker liner.
  • Dice the red bell pepper and onion. Mince garlic if you choose to use fresh garlic cloves then set vegetables aside.
  • Heat the oil in a skillet over medium-high heat.
  • Add ground turkey to the skillet, breaking it up with a wooden spatula.
  • Season the turkey with cumin, oregano, cayenne pepper, salt, and chili powder. Continue to break up the turkey while combining the spices. Cook until there is no pink visible.
  • Once the turkey is cooked through, add to the slow cooker along with the bell pepper, onion, diced tomatoes, corn, garlic, and chicken broth.
  • Top the ingredients in the slow cooker with the taco seasoning and remaining 1 tbsp of chili powder, stirring until combined.
  • Cook on high for 3-4 hours or on low for 6-7 hours.
  • Optional: Add desired toppings like avocado, tortilla chips, sour cream, etc. Enjoy!
