As a huge breakfast fanatic, I cook up this delicious strawberry banana oatmeal bake recipe weekly. This is the perfect recipe to have on hand as a breakfast (or lunch) meal prep dish. While the cook time is a bit longer (50-55 minutes), the prep only takes about 10-15 minutes. My favorite part: You can feel good about getting some fruit into the diet while also quenching those sweetness cravings with the chocolate chips mixed in!
Ingredients
- Oats: I use organic old fashion oats.
- Bananas: Ripe bananas are best a you will be mashing one and slicing the other.
- Strawberries: You’ll need about 1 to 1.5 cups of sliced strawberries.
- Maple Syrup: I use sugar-free syrup for this recipe.
- Milk: You can use any milk of choice. I typically use almond milk.
- Chocolate Chips: I’ve tried both mini chocolate chips and regular sized and I prefer regular over the minis for this recipe.
- Oil: I use olive oil, but you can use any oil of your choosing for this recipe.
- Other ingredients: Egg, cinnamon, baking powder, salt, vanilla extract, cooking spray
Cooking Steps and Prep
- Preheat oven to 375F.
- Spray your baking dish with cooking spray. You can use any size baking dish of your choosing for this bake.
- Thinly slice the banana and strawberries. Set aside.
- In a large bowl, take one banana and use a fork to mash until smooth.
- Once the banana is mashed, you will add in most of the remaining ingredients including the oats, milk, egg, maple syrup, oil, baking powder, cinnamon, and salt.
- Mix these ingredients together until they are fully combined.
- Once combined, add the sliced strawberries, banana, and chocolate chips. Gently fold them into the mixture.
- Poor the mixture into your baking dish and cook for 50-55 minutes until the edges are golden brown.
- If you’d like, you can serve this with toppings such as additional fruit, chocolate chips, maple syrup or milk.
How to Store
You can easily store leftovers in an airtight container or covered dish for 4-6 days. When preparing leftovers, all you need to do is pop them in the microwave for 45 seconds to 1 minute.
Strawberry Banana Oatmeal Bake
Ingredients
- 2 Bananas Ripe bananas work best
- 1-1 1/2 Cup Sliced Strawberries
- 2 Cups Oats
- 1/4 Cup Maple Syrup
- 1/2 Cup Chocolate Chips
- 2 Cups Milk
- 1 Egg
- 2 Tbsp Oil
- 1/2 Tsp Salt
- 1 Tsp Cinnamon
- 1 Tsp Baking Powder
- 1 Tsp Vanilla Extract
Instructions
- Preheat oven to 375F.
- Spray baking dish of your choosing with cooking spray.
- Thinly slice strawberries and one of the bananas. Set aside.
- In a large bowl, mash the other banana until smooth.
- Add in oats, milk, egg, maple syrup, oil, baking powder, cinnamon, and salt. Mix until blended.
- Add sliced strawberries, banana, and chocolate chips, gently folding them into the mixture.
- Bake for 50-55 minutes until the edges are golden brown.
- Serve immediately with desired toppings.
